How's this? And what type of Ram would you suggest? Would it be feasable to use my current Corsair XMS3 DDR3 or get something else?

Unless you need to sell your RAM with your system, I'd just keep it. Nothing wrong with it (granted you should only use 2/3 of it).

And Gigabyte vs ASUS, up to you.

The opinions are all over the board (no pun intended) as to the Z68 over the P67. As well as X58.
but as we all know...any and all wars of the words on HW you read in other forums are just opinions.

I plan to get the Gigabyte Z68 if I DO go with one. Plus the i7-2600K. But most reviews I have read all dam day long have people thinking it's retarded to upgrade to Z68 from P67 and even X58.
however the Sandy Bridge is favored for gaming.
Myself I'm looking at more efficient CPU and better OC'ing. Oh...and newer. :)

Oh and speaking of my Mobo and cpu................... :whistle:

Yeah, no point in getting P67 unless you're cheap ;)

The SSD caching functionality of Z68 is pretty nifty. Maybe get one of those Gigabyte boards that has the onboard SSD?
